I had some extra apples that had been hanging on in my fridge for almost 2 weeks. At that point, I assume I’m not going to suddenly be in the mood for one, but I can always go for some delicious applesauce.
I tend to go for lots of cinnamon and just a tiny bit of sugar, but this can be adjusted to your taste.
5 apples, peeled, cored, diced
2 cups water
Generous dusting of cinnamon
1 tablespoon sugar
Combine ingredients and simmer for 10-15 minutes, stirring occasionally. Once apples are soft and the smaller pieces are starting to break apart, remove from heat. Drain off about half of the liquid (save it and drink it hot or cold!) and either mash with a potato masher (for very chunky applesauce) or lightly blend with an immersion blender. Be careful not to over blend, or it will end up too smooth like baby food. Store in a jar in the fridge and enjoy!
I added the peels to my veggie scrap bin in the freezer; they’re the only fruit item I will use for veggie stock.
